Slow Cooker Pork Taquitos Recipe
Mexican food is comfort food for me. I grew up in Arizona and spent many days enjoying yummy Mexican food. When I got married, I wanted to make sure I incorporated a bit of Mexican flare into my dishes.
One of the first dishes I learned to make was delicious slow cooker Mexican pork. Mexican pork can be used for tacos, taquitos, chimichangas and carnitas. All delicious and all perfect paired with some homemade Pico de Gallo.
Taquitos are one of my favorite dishes because not only are they delicious, but they are perfect for both lunch and dinner.
Make a big batch of taquitos for dinner and freeze the rest for lunches later in the week or month. They freeze really well and can be reheated in the microwave or oven.
This particular recipe is made with pork country style ribs, but you can make them with a pork roast as well. Pork roasts tend to be too big for make Mexican pork taquitos, so I go with the ribs instead.
