It is one I was raised on. I remember coming home from school and smelling the chicken simmering on the stove top. My Mom would have spent much of the day simmering the whole chicken so it was perfect to shred and add to our soup.
Now, as a Mom myself, I wonder how she had the time to simmer that chicken all day or to make her own bone broth. As delicious as it was, this version takes a little less prep but still has just as good of flavor.
So how do I make a soup that is flavorful but doesn't take hours of my time. Here are my tips. I prefer to slow cook my whole chicken in slow cooker at the beginning of the day.
By the time I'm ready to add it to the pot, it is tender, juicy and perfect for soup. But if time is not on your side, you can grab a rotisserie chicken from your local grocery store and they work great.
My favorite part of homemade creamy chicken noodle soup is the broth. I have time, I like to use my own bone broth in my Instant Pot, but that doesn't always happen.
So instead, I find a low sodium chicken broth to add the perfect flavoring. If you feel like it could use a bit more flavor, add a cube of bouillon.
Finally, to make it super creamy I add a can of cream of chicken. Not only is it creamy but it will thicken up your soup. I don't love a really "soupy" soup. I like it to have a little substance to the broth.
Fresh veggies make this a delicious and simple meal that looks like it took you all day to cook. Plus, it has loads of flavor and freezes really well. Add some fresh noodles and you'll have the perfect weeknight meal.
