A Holiday Classic: English Toffee
For my husband, the holidays wouldn’t be complete without a batch of homemade English toffee. It’s his absolute favorite treat, and it’s easy to see why. This buttery, crunchy, chocolate-coated delight has been a staple in his family for generations—his mother and grandmother made it every year.
About 10 years ago, I decided to take up the tradition myself. I’ll never forget the smile on his face the first time he tasted his toffee. Since then, no matter how hectic the holidays get, I always carve out a little time to make toffee.
The recipe is surprisingly quick, with just a handful of ingredients and a bit of careful stirring. The magic happens in minutes, transforming butter and sugar into a golden, crackly treat, topped with melted chocolate and crunchy nuts. It’s one of those sweets that seems fancy but is delightfully simple to create.

- 1 1/2 c. chopped pecans
- 1 c. butter
- 1 c. sugar
- 1 Tbsp corn syrup
- 3 Tbsp water
- 1 c. chocolate chips
Recipe Directions
- Spread 1/2 of the pecans on a buttered cookie sheet or parchment paper.
- Combine butter, sugar, corn syrup and water in a pot. Heat and stir constantly until it reaches 290° F.
- Pour butter mixture over pecans.
- Add chocolate chips while still hot over the mixture.
- Once chips are melted, spread with a spatula or wooden spoon. Top with remaining pecans.
- Once cool, break toffee apart into 1" pieces.
